How to Lasso the mythical creatures in Red Dead Redemption: Undead Nightmares

Part of the available content in Red Dead Redemption is being able to lasso mythical creatures, like the Chupacabra (which will earn you the Chupathingy achievement). You're also shown how to find other achievements, like being able to find the unicorn.
